Pickled onions

Bright fuchsia pink, vibrant and flavourful, one of my favourite garnishes! And so easy, it's a sign of sheer laziness if you don't have some in your fridge right now.
I used a 300ml jar.

Ingredients

  • 1 red onion thinly sliced
  • ½ cup white vinegar
  • ½ cup water
  • tbsp sugar
  • tsp salt

Instructions

  • Mix together the vinegar, salt and sugar in a bowl or jug, then add the onion slices and the water.
  • Pour into a clean and sterilised jar and seal with the lid. Leave to marinate for 1 hour the keep the pickled onions in the fridge.
