Pickled onions
Bright fuchsia pink, vibrant and flavourful, one of my favourite garnishes! And so easy, it's a sign of sheer laziness if you don't have some in your fridge right now.I used a 300ml jar.

- 1 red onion thinly sliced
- ½ cup white vinegar
- ½ cup water
- 1½ tbsp sugar
- 1½ tsp salt
Mix together the vinegar, salt and sugar in a bowl or jug, then add the onion slices and the water.
Pour into a clean and sterilised jar and seal with the lid. Leave to marinate for 1 hour the keep the pickled onions in the fridge.
