The French concept of it's better with butter is not lost on this apple, maple and thyme compote as the texture is so smooth and velvety and I could honestly eat the whole jar. Don't be too scared of the addition of thyme. It simple softens and balances the sweetness, but tread cautiously - too much will be immediately noticeable!

Ingredients
6eating apples
25mlwater
50mlmaple syrup
2tspbrown sugar
1tbspunsalted butter
2 sprigsofthyme
Instructions
Wash, peel and finely dice the apples. Tip into a saucepan along with the water and cook on medium heat for 5 minutes.
Add the maple syrup, sugar, butter and thyme, reduce the heat to low and cook until the apples are completely soft. Use a fork to break down the apple chunks so the compote is smooth and lump-free.
Serve with porridge made in your preferred method, and keep leftover compote in a clean jar in the fridge.
